Our trip to Prince Edward County filled us with inspiration…
We spent yesterday making chili sauce and deciding what to make for dinner, this is what we came up with and how we got there!
But first, lets go back to the County and see where we got those amazing wines!
Karlo Estates is a charming winery located in Wellington, Prince Edward County.
We stopped in and had a tasting.
Sarah took great care of us!
The wines were lovely and we made a few selections to bring home.
If you have a chance to go, it will be well worth your time.
This independent winery is finding it’s feet very nicely offering well priced and palatable selections.
They also have a wonderful dry stone bridge (the largest in North America), nice grounds to meander and as a bonus… they offer free shipping when purchasing 8 or more bottles online.
Now, back to Bayfield…
So, Kent and I have been home for a few days now, we woke up yesterday full of energy…
What to do?!?
How about homemade chili sauce?
Sure, why not? and then a great meal featuring one of the wines from Karlo?…
Sounds good to me!
We had the tomatoes, beautiful Romas… 25lb. of them
I love how fresh everything looks!

A few hours later.
Now the task became planning dinner…
Kent is fantastic in the kitchen, he constantly amazes me, he told me his plan and I left him to it.
My sights set on the table…After all, that much work deserves a nice setting don’t you agree?
Here is what we came up with.
Panko pork schnitzel on grilled flax and honey artisan bread with olive oil sauted zuchinni spears, dressed with homemade chilli sauce and fresh chives.
And the wine… 2010 Cabernet Franc, it has a beautiful sandalwood & nutmeg undertone, perfect with the spices we used in the chili sauce… they mated very well! They say the Cab Franc has a nice long finish… I found it finished a bit to quickly… the bottle that is!
YUMMY! I love when a Sunday comes together!
If you are interested in the chili sauce recipe, Here is the Weberized version we came up with.
Chilli sauce
25lb roma tomatoes, blanched, peeled and chopped
4 onions diced
4 stalks celery chopped
1 green pepper chopped
1 3/4 cup sugar
1 1/2 cup vinegar
8 tsp. Salt
2 tsp.cinnamon
2 tsp. dry mustard
1 tsp curry powder
1 tsp. nutmeg
3/4 tsp. Cayenne
Cook till reduced. Fill jars and process in water for 5 min.
